How to Make Creamy Spinach Soup In A Blender

Here is the easiest and creamiest spinach soup recipe, you will only need a blender. For those winter nights you just want something warm, filling and delicious. Super fast, super healthy, super yummy.


  • 2 cups spinach, washed
  • 1 potato, boiled or microwaved
  • 2 garlic cloves, sliced
  • 1 tbsp olive oil
  • Juice of ½ lemon
  • ½ onion, chopped
  • 1 cup vegetable/chicken broth (or water)
  • Salt & ground black pepper
  • A dab of cream cheese


1. Sauté the onion and garlic in olive oil until the onion starts to brown. Add the spinach and sauté for 30 seconds. 

2. Heat 1 cup of vegetable/chicken broth and pour into the blender. Add potato, sautéed spinach, salt, black pepper and blend for one or two minutes. Feel free to add more broth if you want a runnier soup. If you don’t have any broth, just use water and spices you like to add some flavor.

3. Serve in a bowl with a sprinkle of lemon juice and a dab of cream cheese.
