Delicious Pressure Cooker Spicy Ribs

Are you a spicy food lover? This recipe might be the perfect recipe for you! Using your pressure cooker is a fast and easy way to cook delicious ribs with a perfect balance between hot and sweet!

Ingredients (4 servings)

  • 1 diced habanero pepper (optional for extra spiciness)
  • 1 ½ teaspoons ground black pepper
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon ground cumin
  • 1 tablespoon brown sugar
  • 2 teaspoons neutral oil (canola, corn)
  • ½ chopped onion
  • 3 chopped garlic cloves
  • 2 tablespoons water
  • 2 tablespoons cornstarch
  • 2 pounds beef short ribs
  • 1 can cola (soda)
  • 2 tablespoons apple cider
  • 1 tablespoon jam (raspberry)
  • 1 tablespoon Worcestershire sauce

Instructions

1: Combine in a bowl the habanero pepper, salt, black pepper, paprika, and cumin and rub the mixture all over the ribs. Put the ribs in the fridge for 35/40 minutes. You can skip the habanero pepper if you want to bring the heat down.

2: In another bowl, combine the can of cola, apple cider, jam, Worcestershire sauce, and brown sugar together. Mix well, making sure everything comes together.

3: Heat oil in your pressure cooker over medium-high heat. Take the ribs out of the fridge and put them into the pressure cooker. Try not to overcrowd the cooker, work in batches. Cook until browned, around 7-9 minutes. 

4: Remove the ribs from the pressure cooker and set aside. Then put onions and garlic into the pot. Cook for 4-5 minutes, until onions are translucent. Put the ribs back in the pressure cooker and pour the cola mix all over the ribs.

5: Close the pressure cooker and secure it; always follow the instructions provided by the manufacturer. Keep in high pressure, with steam coming out of the cooker, for approximately 5 minutes. Bring heat down to medium and cook for 30-45 minutes. It’s important to let pressure reduce gradually, for approximately 15 minutes.

6: Combine water and cornstarch together in a bowl. Blend it until it’s a smooth batter. Open the pressure cooker carefully; put ribs on a plate. Filter the sauce to remove any extra fat floating in the liquid and return it to the pot. Add the cornstarch batter and mix. Cook, stirring regularly, over medium-high heat, until it starts to boil. Turn the heat off and put the ribs back in the pressure cooker. Coat them with the sauce and you’re ready to serve!
