Chicken Enchilada Soup

  • 4 cups low or no-sodium chicken broth
  • 1 Tbsp vegetable or grape seed oil
  • 1 medium onion
  • 2 boneless skinless chicken breasts
  • 1 tsp. salt
  • 1/2 tsp. ground cumin
  • 2 green onions
  • 1 (14. oz) can crushed tomatoes
  • 1 (10 oz.) can enchilada sauce
  • 1 (4 oz.) can diced green chilies (optional)
  • 1/2 cup masa harina (cornflour)
  • 2 cups shredded cheddar cheese, divided
  • 10 tortilla chips

Directions

  • Measure the broth into a microwave-safe bowl and put it in the microwave on high for 6
  • Pour the oil into a large pot or Dutch oven and put it over medium Chop the onion and add it to the pot. Stir.
