Rice Cooker One-Pot Fish and Rice

Who doesn’t love one-pot meals? Just a few ingredients, only one appliance. This simple fish and rice recipe is easy, delicious and ready in 20 minutes! 

Ingredients

  • 3 medium fillets of cod or any other fish
  • 1 tablespoon olive oil 
  • 1 cup rice
  • 1 cup chicken or vegetable broth (or water)
  • Salt and pepper
  • Vegetables (for side dish)

Directions

1. Place rice and broth in the rice cooker and cook (follow the manufacturer instructions that came with your appliance). You can add vegetables at this point if you want, but make sure to add more liquid. 

2. While rice is cooking, season the fish fillets with olive oil, salt and pepper, and any other seasoning you like. Cover the rice cooker steam rack with foil and place fish fillets on it, 3-5 minutes before rice is done. In case your rice cooker doesn’t have a steam rack, just place foil directly on top of the rice and fold sides up to avoid oil from spilling out onto rice while steaming. Close lid and cook for 3 to 5 minutes, depending on the size of the filets.

3. When the timer goes off, carefully remove fish and set aside. Scoop some rice and lay a fillet over rice. Serve with vegetables.
